Cheesy Meat & Potatoes Casserole
This is comfort food. Flavorful ground meat of your choosing, with sliced potatoes in a creamy and cheesy sauce! The family is sure to love this layered casserole!
Ingredients
  1. 1 lb. lean ground beef/turkey/pork
  2. 1/2 cup chopped onion
  3. 1 tsp garlic powder
  4. 1/4 tsp pepper
  5. 4 large potatoes peeled and sliced very thin (about 3 cups)
  6. 10.75 oz cream of celery soup
  7. 1/4 cup milk
  8. 1/4 cup sour cream
  9. 1/2 cup beef stock
  10. 1 can sliced mushrooms
  11. 1 1/2 cups shredded sharp cheddar cheese
  12. 1/2 tsp cayenne pepper (if desired)
  13. 1/2 tsp chili powder (if desired)

Instructions
  1. Lightly grease an 11 x 7-inch baking pan. Preheat oven to 350° F
  2. Brown ground meat and onion; drain
  3. Mix the soup, garlic powder, pepper, stock, mushrooms and cream in a bowl
  4. Layer half of the potatoes in the bottom of the prepared baking dish
  5. Pour half the soup mixture over the potatoes
  6. Top with half the ground meat mixture
  7. *** (to spice things up a bit, sprinkle the chili powder and cayenne pepper over JUST this first layer of meat before topping with cheese)
  8. Sprinkle half of the cheese on top
  9. Repeat with second layer
  10. Cover with aluminum foil and place in pre-heated oven
  11. Check for potato doneness in center of casserole after 1 hour (cook up to an additional 30 minutes if potatoes are not soft)
  12. To brown the top and remove additional moisture, remove the foil and bake for an additional 15 minutes, uncovered
  13. Remove from the oven and let casserole stand for about 10 minutes
  14. Slice it lasagna style and serve
