Nick's Ceviche
Refreshing!
Ingredients
  1. 1/2 lb. fully cooked, peeled & deveined popcorn shrimp
  2. 6-7 oz. sashimi grade Ahi tuna sliced into 1/2" cubes
  3. 3 lemons, juiced
  4. 2 limes, juiced
  5. 1 large shallot or 2 large green onion, minced
  6. 1 Jalepenos, minced
  7. 3 Roma tomatoes, diced
  8. 5 Radishes, halved & sliced
  9. 1 avocado, chopped
  10. 1 Cucumber, halved, seeded & Diced
  11. 1 teaspoon Cilantro, finely chopped
  12. 3 Tablespoons white vinegar
  13. 3 Tablespoons Apple cider vinegar
  14. 1/2 Tablespoon Kosher salt
  15. 1 teaspoon Black pepper
  16. 2 teaspoon Gochujang Kick (or 1 teaspoon Cayenne pepper then salt to taste)

  1. Blend all ingredients in a bowl and chill 20-30 minutes before serving.
