Chicken Parmigiana for Two

This is super-easy, quick, way to cook a tender, juicy chicken breast. Fantastic entree with a salad or as a delicious Italian Chicken Sandwich!

Ingredients
- 2 boneless, skinless chicken breasts, pounded thin
- Salt and black pepper
- 1/2 cup all-purpose flour, seasoned with salt and pepper
- 1 large egg, beaten with 1 tablespoon water
- 1/2 cup panko/seasoned breadcrumbs
- 2 Tablespoons vegetable oil or pure olive oil
- 1 cup tomato sauce
- 1/4 pound fresh mozzarella, thinly sliced
- 1/8 cup freshly grated Parmesan
- Fresh basil or parsley leaves, for garnish

Instructions
- Preheat oven to 400 degrees F.
- Pound the chicken breasts to about 1/2" thick all over
- Oil a large (oven safe) pan and heat over high heat until almost smoking.
- Season chicken on both sides with salt and pepper.
- Dredge each breast in the flour and tap off the excess, then dip in the egg and let excess drip off, then dredge on both sides in the breadcrumbs.
- Add the chicken breasts to the pan and cook until golden brown on both sides, about 2 minutes per side.
- Cover each breast with tomato sauce, slices of fresh mozzarella, and sprinkle with the Parmesan.
- Bake in the oven until the chicken is cooked through and the cheese is melted, about 5 to 7 minutes.
- Serve hot.
