This is super-easy, quick, way to cook a tender, juicy chicken breast. Fantastic entree with a salad or as a delicious Italian Chicken Sandwich!

Ingredients
  1. 2 boneless, skinless chicken breasts, pounded thin
  2. Salt and black pepper
  3. 1/2 cup all-purpose flour, seasoned with salt and pepper
  4. 1 large egg, beaten with 1 tablespoon water
  5. 1/2 cup panko/seasoned breadcrumbs
  6. 2 Tablespoons vegetable oil or pure olive oil
  7. 1 cup tomato sauce
  8. 1/4 pound fresh mozzarella, thinly sliced
  9. 1/8 cup freshly grated Parmesan
  10. Fresh basil or parsley leaves, for garnish

Instructions
  1. Preheat oven to 400 degrees F.
  2. Pound the chicken breasts to about 1/2" thick all over
  3. Oil a large (oven safe) pan and heat over high heat until almost smoking.
  4. Season chicken on both sides with salt and pepper.
  5. Dredge each breast in the flour and tap off the excess, then dip in the egg and let excess drip off, then dredge on both sides in the breadcrumbs.
  6. Add the chicken breasts to the pan and cook until golden brown on both sides, about 2 minutes per side.
  7. Cover each breast with tomato sauce, slices of fresh mozzarella, and sprinkle with the Parmesan.
  8. Bake in the oven until the chicken is cooked through and the cheese is melted, about 5 to 7 minutes.
  9. Serve hot.
