Quick Chicken Marinara

This is a nice dish when you're in a hurry. It jazzes up bottled spaghetti sauce nicely for those nights you don't have time make sauce from scratch. Serve with a fresh salad and some italian bread and you have a quick, satisfying meal.

Ingredients
  1. 4 boneless skinless chicken breasts/thighs
  2. 1 medium onion, chopped
  3. 2 cups sliced fresh mushrooms
  4. 3 cloves garlic, minced
  5. 1 teaspoon dried basil
  6. 1/2 teaspoon italian seasoning
  7. 1 (28 ounce) jar spaghetti sauce
  8. 1/2 cup red wine or 1/2 cup chicken broth
  9. Hot cooked linguini pasta

Instructions
  1. In a non-stick skillet cook chicken for approx. 4-5 minutes on each side.
  2. Don't over cook there is additional heating time at the end.
  3. Remove from pan and keep warm.
  4. Sautee onion in pan until turning translucent.
  5. Add mushrooms, garlic, basil, and Italian seasoning.
  6. Saute until mushrooms are tender.
  7. Stir in spaghetti sauce and red wine.
  8. Add chicken, cover and simmer 10 minutes or until heated through.
  9. Serve over pasta.
  10. Top with shredded parmesan cheese if desired.
