Teriyaki Pork Stir-Fry

Teriyaki Pork Stir-Fry
Serves 6
Lean pork loin is marinated in Asian seasonings and served with an array of vegetables for an unforgettable dinner.
Ingredients
  1. 2/3 cup reduced-sodium soy sauce
  2. 1/4 cup packed brown sugar
  3. 1 tablespoon cornstarch
  4. 2 teaspoons peeled, finely chopped fresh gingerroot
  5. 2 garlic cloves, pressed
  6. 1/4 teaspoon crushed red pepper flakes
  7. 1 pound boneless pork loin chops, cut into 1/8-inch strips
  8. 2 cups uncooked instant whole grain brown rice
  9. 1 medium red bell pepper, cut into 1/4-inch strips
  10. 6 ounces fresh snow peas, trimmed
  11. 1 bunch green onions with tops, cut into 1-inch pieces (about 6-8)
  12. 1 teaspoon sesame oil, divided
  13. 1 can (8 ounces) bamboo shoots, drained

Instructions
  1. In Small Batter Bowl, combine soy sauce, brown sugar and cornstarch; whisk until blended.
  2. Finely chop gingerroot or grate it with a small cheese grater.
  3. Add gingerroot, pressed garlic and red pepper flakes to soy sauce mixture.
  4. Slice pork into 1/8-inch-thick strips.
  5. Add pork to soy sauce mixture and toss to coat.
  6. Cover and refrigerate at least 15 minutes to marinate.
  7. Meanwhile, cook rice according to package directions.
  8. Cut bell pepper into 1/4-inch strips, trim snow peas and cut green onions into 1-inch pieces.
  9. Heat 1/2 teaspoon of the oil in large Skillet over medium-high heat 1-3 minutes or until shimmering.
  10. Remove pork from marinade using Slotted Spoon; add to skillet, reserving marinade.
  11. Using Spatula, stir-fry 1-2 minutes or until pork is no longer pink.
  12. Remove from skillet; keep warm.
  13. Heat remaining 1/2 teaspoon oil in same skillet.
  14. Add bell pepper, snow peas and green onions.
  15. Stir-fry 2-3 minutes or until vegetables are crisp-tender.
  16. Return pork to skillet, stir in reserved marinade and bamboo shoots.
  17. Bring to a boil then cook and stir 1 minute or until sauce is thickened.
  18. Serve over rice.
Notes
  1. The secret to successful stir-frying is having all the ingredients sliced, chopped and measured before you begin to cook.
  2. When stir-frying the pork, add the pork to the skillet and let it brown lightly before you begin to stir.
  3. If desired, 1 pound boneless, skinless chicken breasts, cut into thin strips, can be substituted for the pork.
