Pork Chops Over Rice for Two

Delicious, simple, one pot meal for two.

Ingredients
- 2 boneless pork chops
- 1/2 medium onion, finely chopped
- 1 cup frozen peas or peas and carrots or Southwest vegetable mix
- 2 tablespoons butter
- 1/2 cup uncooked rice
- 1 cup chicken broth
- 1 clove garlic, minced
- sprinkle of salt
- sprinkle of black pepper

Instructions
- Season chops with salt & pepper.
- Brown chops in butter and remove.
- Add remaining ingredients to pan; top with pork chops.
- Bring to a boil.
- Reduce heat; cover and simmer about 20-25 minutes or until rice is tender and meat thermometer inserted in center of chop reads 145°F.
