Ingredients
  1. 2 boneless pork chops
  2. 1/2 medium onion, finely chopped
  3. 1 cup frozen peas or peas and carrots or Southwest vegetable mix
  4. 2 tablespoons butter
  5. 1/2 cup uncooked rice
  6. 1 cup chicken broth
  7. 1 clove garlic, minced
  8. sprinkle of salt
  9. sprinkle of black pepper

Instructions
  1. Season chops with salt & pepper.
  2. Brown chops in butter and remove.
  3. Add remaining ingredients to pan; top with pork chops.
  4. Bring to a boil.
  5. Reduce heat; cover and simmer about 20-25 minutes or until rice is tender and meat thermometer inserted in center of chop reads 145°F.
