Ingredients
  1. 2 Tablespoons sesame oil, divided
  2. 1 large egg
  3. 1 teaspoon water
  4. Kosher salt
  5. 1/2 large carrot, diced
  6. 1 green onion, thinly sliced, white and green parts divided
  7. 1 clove garlic, minced
  8. 1/2 teaspoon peeled and minced ginger (from a 1" piece)
  9. 1/2 cup cooked long grain rice (previously cooked and chilled - crispier when frying)
  10. 1/4 cup frozen peas
  11. 2 teaspoons low-sodium soy sauce

Instructions
  1. Heat a large skillet over high heat until very hot, about 2 minutes.
  2. Add 1 tablespoon oil.
  3. Beat egg with 1 teaspoon water and a pinch salt and add to skillet. Cook, stirring to form large soft curds, about 30 seconds. Transfer to a plate.
  4. Return skillet to high heat and add 1 tablespoon oil, the carrots, and whites of the green onions.
  5. Cook until lightly golden, about 2 minutes.
  6. Add garlic and ginger and cook, stirring, until fragrant (about 1 minute).
  7. Add rice, peas, and cooked eggs to skillet.
  8. Pour in soy sauce and cook, stirring until heated through (about 1 minute).
  9. Season with salt and pepper and stir in the remaining green onions.
Notes
  1. Finely chopped roasted peanuts or hazelnuts stirred into the rice, with the onion at the end add an additional nutty, roasted flavor.
