Shepherd’s Pie

Shepherd's Pie
Serves 4
Delicious comfort food for those cold evenings.
Ingredients
  1. 1 pound lean ground beef, pork or turkey
  2. 2 cups hot prepared mashed potatoes
  3. 1 1/2 cups beef gravy
  4. 1/2 cup onion, chopped
  5. 1 garlic clove, pressed
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon dried thyme leaves
  8. 1/4 teaspoon ground black pepper
  9. 2 cups frozen vegetable blend such as mixed vegetables or peas and carrots
  10. 1/2 cup cheddar cheese, shredded

Instructions
  1. Boil potatoes and prepare gravy.
  2. In a large fry pan, brown the ground meat, chopped onion and garlic then drain.
  3. Thoroughly mix in seasonings then add vegetables and gravy to pan. Bring mixture to a boil then spoon into oval baking dish.
  4. Preheat oven to 375° F.
  5. Prepare mashed potatoes (keep them stiff) then sprinkle half of cheese over potatoes and mix lightly.
  6. Spoon potatoes into decorator bag fitted with open star tip (if desired). Pipe potatoes around edge of baking dish over meat mixture.
  7. Bake 25-30 minutes or until thoroughly heated.
  8. Remove baking dish from oven and sprinkle remaining cheese over potatoes.
  9. Let stand 5 minutes before serving.
