Ingredients
  1. 3 Tablespoons butter
  2. 1 Tablespoon olive oil
  3. 1 small yellow onion, diced
  4. 12 ounces chicken breasts, cubed
  5. ½ teaspoon Old Bay
  6. ½ teaspoon Paprika
  7. ¼ teaspoon ground Chipotle Chili Pepper
  8. 8 ounces sliced mushrooms
  9. 3 cloves garlic, minced
  10. 1¼ Cups rice
  11. 3 Cups chicken broth
  12. Dash of black pepper
  13. grated Parmesan, for garnish
  14. chopped fresh parsley, for garnish

Instructions
  1. Preheat oven to 375˚F.
  2. Combine butter and olive oil in a large oven-safe skillet and set over medium high heat; melt the butter.
  3. Add onions to skillet and cook for 2 minutes.
  4. Season chicken with Old Bay, Paprika, and Chipotle Chili Pepper.
  5. Add chicken to the skillet; cook for 5 minutes, or until golden brown on all sides.
  6. Stir in mushrooms; season with a dash of pepper, stir, and continue to cook for 4 minutes, stirring frequently, until mushrooms are tender.
  7. Stir in minced garlic.
  8. Stir in rice and cook for 1 minute.
  9. Stir in chicken broth; increase heat to high and bring to a boil.
  10. Turn off heat. Cover skillet with a lid and bake in the oven for 30 minutes.
  11. Remove cover and continue to bake for 3 more minutes, or until liquid is absorbed.
  12. Remove from oven and let stand 5 minutes.
  13. Garnish with Parmesan cheese and parsley; serve.
