Ingredients
  1. 1 lb mild Italian sausage
  2. 1/2 lb frozen, cut okra
  3. 3 yukon gold potatoes chopped (bite size)
  4. 1 onion chopped
  5. 3 cloves garlic minced
  6. 1/4 cup masa harina or polenta
  7. 1 cup frozen corn or southwest vegetable mix
  8. 8 cups chicken broth
  9. 2 1/2 teaspoon salt
  10. 1 teaspoon pepper
  11. 1/2 teaspoon red pepper flakes
  12. 1 Tablespoon Chili Powder
  13. 1 teaspoon Cumin

Instructions
  1. Brown the sausage over medium heat in a heavy bottom pan - you want it to be well browned and broken up into little pieces.
  2. While the sausage is cooking, chop the onions, potatoes and mince the garlic.
  3. When the sausage is browned, add in the okra, potatoes & onion.
  4. Sauté for about 4 minutes and add the garlic and masa harina/polenta. Mix well, then stir in the seasonings and red pepper flakes.
  5. Increase the heat to high and add the chicken broth, bring to a boil.
  6. Stir well scraping the brown bits from the bottom of the pan.
  7. Reduce to simmer and cook for another 20 minutes stirring occasionally.
  8. Add in the frozen corn/vegetables once the potatoes are cooked thru.
  9. The stew will thicken as it cooks. When the potatoes are fork tender, the stew is complete. Enjoy!
Notes
  1. Sprinkle Mexican Blend shredded cheese on the soup and toss in some of your favorite corn tortillas for a zesty Southwestern dish!
