Ingredients
  1. 2 Tbsp coconut oil
  2. 1 large onion, peeled and chopped
  3. 2 ribs celery, chopped
  4. 3 cloves garlic, peeled and minced
  5. 4 cups low-sodium chicken stock
  6. 1 qt chopped tomatoes
  7. 1 large rutabaga peeled and cut into 1/4-inch cubes
  8. 1 head kale, stemmed and coarsely chopped (about 6 cups)
  9. 1 small head savoy cabbage, coarsely chopped
  10. 1 tablespoon balsamic vinegar
  11. 2 cups diced/cubed ham
  12. 1 teaspoon kosher salt
  13. 1 teaspoon black pepper
  14. Parmesan cheese to taste

Instructions
  1. Set the Instant Pot to Sauté Mode and melt the coconut oil.
  2. Sauté onions and celery in hot oil until onions are translucent.
  3. Add in garlic and cook until fragrant.
  4. Stir in chicken stock, rutabaga and tomatoes and heat to boiling.
  5. Press cancel button to turn pot off.
  6. Stir in balsamic vinegar, ham, cabbage, kale, salt and pepper.
  7. Seal pot and set to soup mode (high pressure, 30 minutes).
  8. Slow release for 10 minutes, then fast release.
  9. Sprinkle with grated parmesan cheese when serving.
