WOW! I never eat enough seafood and this is definitely the way to overcome that (and one of my new favorites)! Though the word Cioppino and the associated dish here in the US was definitely popularized in the San Francisco area of California, the roots of the dish and name are from Italy. The Italian flair of this tomato based seafood stew using the daily catch comes from the fisherman from Genoa that immigrated to the US and settled in the Bay area of California. Legend has it that rounds were made to the boats that came in for the day asking for any seafood to "CHIP IN" to the communal pot of stew, add the Italian influence and hence the name; Cioppino (chip-EEN-o ).
Ingredients
  1. 1/4 cup extra-virgin olive oil
  2. 1 large onion, coarsely chopped
  3. 4 garlic cloves, minced
  4. 1 tsp Old Bay® seasoning
  5. 1 tsp McCormick® Tuscan seasoning
  6. 1 dried bay leaf
  7. 1 quart chopped peeled tomatoes with juice
  8. 1 1/4 cups cooking sherry
  9. 1 1/4 cups water
  10. 1 pound imitation crab, cut into 1-inch pieces
  11. 2 cans chopped/minced clams (save the juice)
  12. 1 cup clam juice (from the two cans)
  13. 1 pound firm, skinless white fish fillets (such as red snapper, sea bass, or halibut), cut into bite-size pieces
  14. 1 pound large cooked shrimp (about 30), peeled and de-veined, tails left on if desired
  15. 1/2 cup coarsely chopped fresh flat-leaf parsley

Instructions
  1. Heat oil in a large stockpot over medium heat. Cook onion and garlic until onion is translucent, 3 to 4 minutes.
  2. Stir in Old Bay and Tuscan seasoning and bay leaf.
  3. Add crushed tomatoes and their juice, cooking sherry, water, and clam juice; bring to a simmer.
  4. Add fish, crab, clams and shrimp to a large bowl and lightly season with salt and pepper and stir well.
  5. Add seafood to stockpot and simmer, covered, until fish is opaque (2 to 3 minutes).
  6. Discard bay leaf, remove pot from heat, stir in parsley, serve hot.
Notes
  1. Feel free to replace any seafood component with "your" catch of the day; squid, scallops, etc.! Adjust the simmer time accordingly.
