Ingredients
  1. 4 heaping cups small cauliflower pieces, stems included
  2. 2 Tablespoons olive oil
  3. 2 teaspoons of garlic, finely minced
  4. 2 sliced green onions
  5. salt and fresh-ground black pepper to taste

Instructions
  1. Using a steel blade, process 4 cups of cauliflower (a little at a time) in a food processor, buzzing it in short bursts until it’s finely chopped enough to resemble rice, but slightly larger.
  2. Chop the green onions into 1/4 inch pieces.
  3. Heat the oil in a non-stick frying pan over medium-high heat.
  4. Add the cauliflower to the hot pan and season generously with salt and fresh-ground black pepper.
  5. Stir fry the cauliflower, turning it often for 2 minutes.
  6. Add the minced garlic, and stir often until the cauliflower starts to soften and lose the raw taste, about 1-2 more minutes. (Taste a little to see if it’s done to your liking; I prefer it still slightly crisp.)
  7. Turn off the heat, stir in the green onions, and serve immediately.
