Keto Breakfast Casserole

One of my favorite meats (other than bacon) is Sweet Italian sausage. This keto casserole uses that sausage, is simple but goes way beyond bacon and eggs for breakfast! Be forewarned... don't dish up more than one serving;this will fill you up!
Ingredients
  1. 11 Large Eggs
  2. 1/2 Cup Red Bell Pepper (chopped)
  3. 2 Cup Cauliflower (diced)
  4. 1 lb Johnsonville Mild Italian Sausage (cooked)
  5. 1 lb Bacon (cooked and crumbled)
  6. 1 Cup Sharp Cheddar Shredded
  7. 1 Tsp Salt
  8. 1 Tsp Pepper

Instructions
  1. Pre-heat oven to 350
  2. Cook bacon and sausage (don't drain) and set aside
  3. Place bell pepper, cauliflower, eggs, salt and pepper in a bowl and mix well.
  4. Pour egg mixture into a 9 x 13 baking pan and add Italian sausage (mix together)
  5. Top with cheddar and bake for 30-35 minutes
  6. Remove from oven and add crumbled bacon to the top
  7. Serve and Enjoy!
