Curried Lamb Fricassee

Karla's Curried Lamb Fricassee
Serves 6
Wonderful dish could be served as a stew but goes well over Orzo pasta. Season this one with the Curry Powder and extra herbs to your liking.
Ingredients
  1. 2 teaspoons vegetable oil
  2. 1 Tablespoon curry powder
  3. 1/2 teaspoon salt
  4. 1 pound lamb stew meat
  5. 2 cups diced onion
  6. 3 cups cubed potatoes
  7. 1 cup diagonally sliced carrots
  8. 1 cup cubed green bell pepper
  9. 1 cup cubed red bell pepper
  10. 3/4 cup golden raisins
  11. 2 tablespoons curry powder
  12. 1 Tablespoon peeled, grated fresh ginger
  13. 2 cups diced plum tomatoes
  14. 3/4 cup beef broth

Instructions
  1. Heat oil in a Dutch oven or large sauté pan over medium heat.
  2. Add 1 Tablespoon curry powder and ½ teaspoon salt; sauté 10 seconds.
  3. Add lamb and onion and cook 5 minutes over medium-high heat or until the lamb is browned.
  4. Stir in potatoes, carrots, bell peppers, raisins, 2 Tablespoons curry powder and ginger and cook for 2 minutes.
  5. Stir in diced tomatoes and beef broth; cover, reduce heat and simmer 35 minutes or until vegetables are tender.
  6. Season to taste with Mrs. Dash – Original or your favorite fresh herbs.
  7. Serve over rice or Orzo pasta.
