Noodles
  1. Place the flour, salt and baking powder in the sifter and sift into a large bowl then mix well (NOTE: if you don’t want the thick noodles, leave out the baking powder).
  2. In a separate bowl, blend and beat the egg, milk and butter.
  3. Pour the liquid mix into the flour mix and knead into dough until smooth (about 5 minutes).
  4. Let rest in a covered bowl for about 10 minutes.
  5. On a floured surface, roll out dough to ¼ inch thickness.
  6. Cut into desired width noodles with a pizza knife and cut to desired length (I do ¼” by 4”).
  7. Separate and toss noodles then allow to air dry before cooking (1 to 2 hours – depends on the thickness of the noodles).
Soup
  1. Sweat onions, carrots, celery and garlic in a large covered stock pot until onions are translucent and carrots begin to soften. Season with the pepper, basil and thyme while sweating.
  2. Add turkey stock, frozen peas and turkey meat then bring to a boil (salt and pepper to taste).
  3. Add dried noodles and boil until desired consistency (depends on the thickness of noodles – probably 10 to 15 minutes).
