Pickled Jalapeño Peppers

Every now and then you just gotta' have something good and spicy! This is the best way to dress up any dish with that wonderful Jalapeño flavor.
Ingredients
- ¾ cup water
- ¾ cup white vinegar
- 3 Tablespoons sugar
- 1 Tablespoon pickling salt
- 1 clove garlic (crushed)
- ½ teaspoon Oregano
- 10 large Jalapeño peppers (sliced into rings)

Instructions
- Combine water, vinegar sugar, salt, garlic and oregano in a saucepan, over high heat. Bring mixture to a boil then stir in peppers and remove from heat.
- Let mixture cool for 10 minutes.
- Pack peppers into jars using tongs, cover with vinegar mixture.
- Cover and refrigerate.
Notes
- Variation: Replace some of the peppers with pieces of cauliflower, carrots, celery, etc. to create a spicy hot Southwestern Mix!
