Santa Maria Style Pinquito Beans

A great side dish for the Smoked Tri-Tip BBQ! Mildly spicy beans with ham, bacon tomatoes and garlic. Be sure to make enough to go around!
Ingredients
- 1 can pinquito beans, drained and rinsed
- 1 can diced tomatoes with chili peppers
- 1 strip bacon, diced
- 1/2 cup diced ham
- 1 clove garlic
- 1 tablespoon enchilada seasoning
- 1/2 cup chicken stock
- 1 teaspoon dry mustard
- 1 tablespoon sugar

Instructions
- Drain beans and rinse with fresh water.
- Sauté bacon and ham until lightly browned.
- Add garlic, sauté 1 to 2 minutes longer.
- Add tomatoes, enchilada seasoning, chicken stock, sugar, mustard and blend well.
- Stir beans into sauce and simmer for 1/2 hour to thicken.
