Broccoli-Bacon Salad

Donna B's Broccoli-Bacon Salad
Serves 8
A hardy, flavorful salad. Great for large gatherings, picnics or BBQs.
Ingredients
  1. 1 head lettuce, chopped
  2. 3 cups broccoli flowerets, fresh
  3. 1 red onion, chopped
  4. 1 lb. bacon, fried & diced
  5. 1/4 cup sugar
  6. 1 cup mayonnaise
  7. 1/3 cup parmesan cheese
  8. Salt & pepper to taste

Instructions
  1. Break lettuce & broccoli into bite sized pieces.
  2. Chop red onion.
  3. Layer lettuce, broccoli, onion and chopped bacon in a large glass bowl.
  4. Mix together the sugar and mayonnaise until sugar appears dissolved.
  5. Blend into the mayonnaise mixture the Parmesan cheese, salt and pepper.
  6. Spread on top of the lettuce, bacon and onion.
  7. Cover tightly and refrigerate overnight.
  8. Toss well just before serving.
  9. For a variation, add raisins or carrots or peanuts or sunflower seeds or cauliflower.
Notes
  1. For KETO, replace the sugar with Stevia and you remove 24 calories and 6 carbs per serving!
