Oven-Roasted Asparagus
Asparagus is amazingly versatile: it can be steamed, simmered, roasted, battered, grilled, sautéed or wok-fried. I prefer roasted and this is my favorite recipe! The lemon juice at the end removes any remnants of bitterness.
Ingredients
  1. 1 bunch thin asparagus spears, trimmed
  2. 3 Tablespoons olive oil
  3. 1 ½ Tablespoons grated Parmesan cheese
  4. 1 clove garlic, minced
  5. 1 teaspoon sea salt
  6. ½ teaspoon ground black pepper
  7. 1 Tablespoon lemon juice

Instructions
  1. Rinse asparagus and pat dry.
  2. Bend asparagus to break off the stiff, woody ends.
  3. Preheat oven to 425° F.
  4. Place the asparagus into a mixing bowl, and drizzle with the olive oil.
  5. Toss to coat the spears and then sprinkle with grated Parmesan cheese, garlic, salt, and pepper.
  6. Arrange the asparagus onto a baking sheet in a single layer.
  7. Bake just until tender, 12 to 15 minutes depending on thickness.
  8. Sprinkle with lemon juice just before serving.
