Grilled Honey-Lime Sriracha Chicken

Karla's Grilled Honey-Lime Sriracha Chicken
Serves 4
Forget boring old chicken breasts. Spice things up with this flavor packed recipe. If you like making salads with chicken breasts, you'll love this! Use chicken thighs instead and serve as a main course with rice pilaf and a salad.
Ingredients
  1. 1/4 cup honey
  2. 3 tablespoons low-sodium soy sauce
  3. 1 tablespoon olive oil
  4. Zest and juice of two limes
  5. 3 garlic cloves, peeled
  6. 2 tablespoons Sriracha sauce
  7. 1 teaspoon kosher salt
  8. 4 boneless skinless chicken breast halves (about 6 ounces each)

Instructions
  1. In a liquid measuring cup or small bowl, whisk together the honey, soy sauce, olive oil, lime zest and juice, garlic cloves, Sriracha, and salt.
  2. Place the chicken in a gallon sized zip top bag or other re-sealable container and pour the marinade mixture all over the chicken. Seal the container and shake to coat completely.
  3. Let marinade 4 to 24 hours in the refrigerator.
  4. Remove the chicken from the marinade before grilling, discarding the leftover marinade.
  5. Prepare the grill for direct cooking over medium heat (350°F to 450°F).
  6. Grill the chicken with the lid closed as much as possible until the meat is firm and opaque with an internal temperature of 165°F, about 4 to 6 minutes per side.
Variations
  1. Substitute chicken breasts with thighs.
  2. Increase the amount of Sriracha if you enjoy more of a kick!
