Tater Topped Fish Bake
Serves 4
On a busy day, this quick-to-fix dish will let you catch your breath while dinner is baking! It's another way to get fish in your diet and the kids love it because it's covered in tater tots!
Ingredients
  1. 1 package (16 ounces) frozen broccoli, carrots and cauliflower vegetable blend
  2. 1 pound orange Roughy fillets (about 4 fillets)
  3. 1 can (10 3/4 ounces) condensed cream of celery soup
  4. 2 cups shredded sharp cheddar cheese, divided
  5. 1/4 cup milk
  6. 1/8 teaspoon ground black pepper
  7. 3 cups frozen shredded potato nuggets
  8. Snipped fresh parsley

Instructions
  1. Preheat oven to 425° F.
  2. Place vegetables in large micro-wave safe dish.
  3. Microwave according to package directions. Drain well and lightly pat dry with paper towels.
  4. Place vegetables in bottom of square baking dish.
  5. Top with fish fillets.
  6. In a large bowl, combine soup, 1 cup of the shredded cheese, milk and black pepper; mix well and pour over vegetables and fish fillets in baking dish.
  7. Top with potato nuggets.
  8. Bake 20 minutes then sprinkle with remaining 1 cup cheese and bake an additional 5 minutes or until cheese is melted and sauce is bubbly.
  9. Sprinkle with parsley.
