Mango Salsa

Carmen's Mango Salsa
Serves 8
This light and summery salsa can be eaten as an appetizer with tortillas or as a garnish! Pairs well with white fish, shrimp and scallops.
Ingredients
  1. 4 ripe mangos
  2. 3 jalapeño peppers (seeded)
  3. 1 red onion
  4. 1 small bunch of cilantro
  5. 1 lime
  6. Olive oil
  7. Salt &Pepper

Instructions
  1. Chop mango, jalapeño & onion into small pieces.
  2. Remove cilantro stems & chop leaves well.
  3. Blend in bowl and lightly coat with Olive oil.
  4. Squeeze juice from lime into salsa mixture, salt and pepper to taste, mix well.
  5. Refrigerate 1 hour to let flavors blend.
Notes
  1. Adding chopped tomatoes create a more “Mexican flavor profile.
  2. Adding chopped pineapple makes it more “Tropical.”
