Pita Bread
Nick's delicious pita! Makes great cut pita chips or just tearing and dipping in Nick's Garlic Hummus.
Ingredients
  1. 1 tsp dry active yeast
  2. 1 Tbsp. warm water (95-105F)
  3. 1 tsp salt
  4. 2 Cups All-Purpose flour
  5. 2 Tbsp. olive oil
  6. 1/2 Cup warm water

Instructions
  1. Mix yeast with 1 Tbsp. water to activate (until it foams, 5-10 minutes)
  2. Mix flour and salt. Add yeast mixture when ready and olive oil and warm water.
  3. Knead into a ball, put in an oiled bowl (2 Tbsp. olive oil). Cover with a towel or plastic wrap.
  4. Proof 45 min – 1 ½ hours, until it's doubled in size.
  5. Heat oven to 400 degrees F. and put a non-stick pan in oven to heat up. (With a regular sheet pan, just heat it and oil it later). The pan must be heated or the bread will not bubble when placed on the pan.
  6. Roll dough out into a snake. Cut into 6 pieces and shape them into balls.
  7. Roll pieces out into circles, around 1/8 inch thick, about 6 inches in diameter.
  8. Bake circles on hot pan (oil it if not non-stick pan) until they bubble up, then remove (about 5-6 minutes for soft Pita bread, 8 minutes for crispy chips).
  9. Cut in half and slice the remaining openings if need be with a paring knife or slice into triangles for crispy chips (cut like a pizza).

  1. • It's done when just a few light brown spots appear
  2. • Number Of Servings: Six – 6 inch pita breads
  3. • Preparation Time: 1 ½ - 2 hours
