Pork Taco Potato Bake consists of layers of sliced potatoes, onions, black olives, taco seasoned ground pork, and shredded cheese covered in a basic white sauce. This is an easy casserole that is reminiscent of what Mom or Grandma might serve.

Ingredients
- 4 cups potatoes, cleaned and sliced thin
- 1 cup reserved potato water
- 1 pound ground pork
- 2 Tbsp taco seasoning + 1/2 cup water
- 1 cup thinly sliced onions
- 1 small can sliced black olives
- 2 cups Mexican Blend cheese, shredded
- 3 Tablespoons butter
- 1/4 cup flour
- 1 cup milk

Instructions
- Preheat oven to 375 degrees F.
- Spray a 13 x 9 inch baking dish with non-stick cooking spray.
- Boil cleaned, sliced potatoes for 5 minutes in salted water. Reserve 1 cup of cooking water; drain the remaining water.
- Brown the pork and add the taco seasoning and 1/2 cup water, thoroughly mixing. Simmer off the liquid.
- In a small saucepan; melt butter. Add flour and whisk until smooth.
- Slowly add 1 cup reserved potato water and 1 cup milk; whisking over medium heat until smooth.
- In the casserole dish, place the sliced potatoes, cover with half the shredded cheese, top with onions and black olives, cover this with the pork mixture, then top with remaining shredded cheese.
- Pour white sauce over the entire casserole.
- Cover with foil, and bake for 45 minutes.
- Remove foil and bake an additional 10 minutes for a crustier casserole topping.
- Remove from oven, and let sit for 10 minutes before serving.
