Nick's Red Lentils

Red lentils - small, mild, and already split, so they’re the easiest of the bunch to cook. Plus, they’re crazy high in fiber, protein, and antioxidants. This yummy red lentil recipe is super satisfying. Try smothering a grilled pork chop with it! Yum!
Ingredients
- 2.5 Cups red lentils – pick through to remove any rocks, rinse 3 times, soak in fresh water 20 min
- 1 small white onion – diced small
- 2 medium shallots – diced small
- 3 Roma tomatoes – diced medium
- 1 thumb-size ginger – peeled and minced
- 3 cloves garlic – minced
- 1 Tablespoon coriander
- 1 Tablespoon chili powder (I used Kashmiri red chili, can use cayenne)
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon pepper

Instructions
- Blend all the spices and separate into thirds
- In a medium stock pot, caramelize onion and shallots – med to med-high heat
- Add ginger and garlic
- Add 1/3 of the spices
- Mix until fragrant
- Add tomatoes, mix (I did some mashing with a potato masher)
- Add drained lentils
- Add another 1/3 of the spices
- Add 8 C hot water (I used tea kettle), bring to boil, reduce to simmer, cover and simmer for 30 min stirring occasionally
- Heat 3 Tablespoons butter in small sauté pan
- Add last 1/3 of spices and any chilis if you have them (I didn’t) and bloom the spices
- Pour that mixture into the lentils
- Stir and add cilantro (as desired)
- Salt and pepper to taste
