Stuffed Anaheim Peppers
Stuffed Anaheim Peppers are loaded with tons of flavor from the pepper, sausage, corn, black beans, salsa, and more! With less of a kick than a jalapeno pepper, these stuffed peppers can be enjoyed by the whole family!
Ingredients
  1. 4 Anaheim peppers, cut in half with seeds and membrane removed
  2. 2 cups browned ground Italian sausage
  3. 1 cup corn
  4. 1 cup black beans, drained and rinsed
  5. 1 cup salsa
  6. 2 tablespoons taco seasoning
  7. 6 ounces cream cheese, room temperature
  8. 1 cup cheddar cheese, shredded
  9. Cilantro, for garnish
  10. Sour cream, for garnish

Instructions
  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine the sausage, corn, beans, salsa, taco seasoning, and cream cheese. Stir until incorporated.
  3. Fill each pepper with the mixture and place them in an oven-safe skillet. Add cheese to the top of the peppers.
  4. Bake 20 minutes (or until pepper is soft and cheese is melted).
  5. Top with fresh cilantro and sour cream.
Notes
  1. I'm thinking these would be great with Poblano peppers as well!
