Ingredients
  1. 1 tablespoon butter
  2. 1/2 cup uncooked white rice
  3. 1 cup chicken broth
  4. 1 cup Southwest frozen vegetable mix
  5. 1/2 teaspoon salt

Instructions
  1. Preheat an oven to 375° F.
  2. Prepare a 1 quart baking dish with butter.
  3. Melt the butter in a large skillet over medium-high heat.
  4. Stir in the rice; cook until the rice is slightly golden.
  5. Stir in the vegetables and chicken broth and season with salt.
  6. Simmer another 5 minutes then transfer to the prepared dish.
  7. Bake uncovered until the broth is completely absorbed, 35 to 40 minutes.
  8. Fluff with a fork to serve.
