A delicious, healthy, simple slow cooked meal made with pork tenderloin, potatoes, carrots, celery, onions, mushrooms and flavored with Italian Seasoning.

Ingredients
  1. 1 to 2 lbs pork tenderloin
  2. 15 baby carrots, sliced in half, lengthwise
  3. 1 large celery stalk celery, diced
  4. 1 lbs baby potatoes
  5. 2 cups low sodium chicken broth
  6. 2 tsp. Italian Seasoning
  7. 1/2 Tbsp black pepper
  8. 1 tbsp. cornstarch
  9. 1/4 cup water

Instructions
  1. Add pork tenderloin to crockpot and surround and cover it with the vegetables.
  2. Pour broth over pork and vegetables.
  3. Sprinkle the pork and vegetables with Italian seasoning and pepper.
  4. Cook on low for 8 - 10 hours or cook on high for 4 - to 6 hours.
  5. With tongs, carefully add pork onto serving plate.
  6. With a slotted spoon, add vegetables to the side of the pork on serving plate, leaving a few vegetables in the pot.
  7. Using a stick blender, blend the remaining vegetables and juices in the instantpot and turn up temp (sautee).
  8. Add cornstarch to 1/4 cup cold water, blend thoroughly; stir into juices in instantpot for a thicker gravy.
  9. Pour gravy over pork and vegetables.
