Blackened Fish Tacos

Blackened Fish Tacos
Serves 4
Seasoned & blackened fish fillets served atop a bed of crispy slaw and wrapped in tortillas for a light family supper.
Slaw
  1. 1/4 cup sliced green onions with tops
  2. 2 tablespoons snipped fresh cilantro
  3. 1 tablespoon fresh lime juice
  4. 1 tablespoon vegetable oil
  5. 1 garlic clove, pressed
  6. 1 teaspoon sugar
  7. 2 cups broccoli slaw mix
  8. 1/2 teaspoon Cajun or blackened fish seasoning (see Tom's Blackened Seasoning recipe under Dips, Sauces & Seasonings Category)
Fish
  1. 1 pound tilapia fish fillets
  2. 1 tablespoon Cajun or blackened fish seasoning
  3. 2 Tablespoons butter
  4. 1 avocado, seeded and sliced
  5. 8 (6-inch) corn tortillas, warmed
  6. 3 medium radishes
  7. Additional snipped fresh cilantro (optional)

Instructions
  1. For slaw, in bowl, combine green onions, cilantro, lime juice, oil, pressed garlic, sugar and Cajun seasoning; whisk until blended.
  2. Add slaw mix; toss to coat.
  3. Cover; refrigerate until ready to serve.
  4. Heat Fry Pan over medium heat 5 minutes.
  5. Moisten fish fillets with water and sprinkle with Cajun seasoning.
  6. Melt the butter in the fry pan.
  7. Place fillets in pan; cook over medium heat 10-12 minutes or until fish flakes easily with fork, carefully turning once.
  8. Remove from heat and flake fish into bite-size pieces.
  9. Cut avocado in half lengthwise; remove seed and cut flesh away from skin.
  10. Cut one avocado half into slices. (Reserve remaining half for another use.)
  11. Load warmed tortillas evenly with slaw mixture and fish.
  12. Grate radishes evenly over fish.
  13. Top with avocado slices and sprinkle with additional cilantro, if desired.
Notes
  1. Catfish is an excellent substitute for tilapia.
  2. Sprinkle shredded cheese on the taco for additional flavor.
