White Chili

A yummy, hearty chili with chicken and white beans. Dress it up or down as you see fit!

Ingredients
  1. 3 Cups Cooked Chicken, shredded
  2. 2 Tablespoons butter/oil
  3. 1 whole Medium Onion, Diced
  4. 4 cloves Garlic, Minced
  5. 1 can Diced Green Chilies
  6. 2 cans Great Northern Beans
  7. 8 cups Chicken Broth
  8. 1 1/2 tbsp. Ground Cumin
  9. 1/2 tsp. Paprika
  10. 1/2 tsp. Cayenne Pepper
  11. Salt To Taste
  12. White Pepper, To Taste
  13. 1 cup Whole Milk
  14. 2 Tablespoons Masa

Instructions
  1. Add the butter/oil to a large stock pot
  2. Saute onions until translucent
  3. Add garlic and chilies
  4. Saute for another 2-3 minutes then add the chicken broth
  5. Stir well and bring to a low boil.
  6. Reduce heat to medium and add chicken and beans.
  7. Stir in seasonings and heat for about 35 minutes.
  8. Mix the Masa in the cold milk and let combine for a couple minutes, then stir into the chili.
  9. Simmer for about 25 minutes.
Notes
  1. Cook Cornbread while simmering the soup!
