Southern White Beans and Ham

Spicy comfort food, especially with corn bread. Great way to use your leftover Christmas Ham!

Ingredients
- 2 Tablespoons oil
- 2 cans White Northern Beans
- 8 cups chicken broth
- 3 cups shredded/chopped ham
- 1 sweet yellow onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup carrots, finely chopped
- 1/8 cup diced Jalapeno peppers
- 3 cloves garlic, minced
- 2 teaspoons Cajun/Southern Seasoning
- Salt and White Pepper to taste

Instructions
- Add the oil to a large stock pot and heat.
- Sautee onions until translucent.
- Add carrots, celery, garlic and Jalepenos.
- Sautee for another 2-3 minutes then add the chicken broth and seasonings.
- Stir well and bring to a low boil.
- Reduce heat to medium and add ham and beans.
- Mix the Masa in the cold milk and let combine for a couple minutes, then stir into the soup.
- Simmer for about 35 minutes.
Notes
- Bake Cornbread while simmering the soup!
