Ingredients
  1. 1 tablespoon cornstarch
  2. 1/2 cup beef broth
  3. 1/4 cup cooking sherry
  4. 2 tablespoons soy sauce
  5. 1 tablespoon brown sugar
  6. 1 garlic clove, minced
  7. 1 teaspoon fresh ginger root, minced
  8. 2 teaspoons oil, divided
  9. 1/2 pound beef top sirloin steak, cut into 1/4-inch-thick strips
  10. 2 cups fresh small broccoli florets
  11. 8 green onions, cut into 1-inch pieces

Instructions
  1. Mix the first 7 ingredients in a bowl.
  2. In a large nonstick skillet, heat 1 teaspoon oil over medium-high heat; stir-fry beef until browned, 1-3 minutes and remove from pan.
  3. Stir-fry broccoli in remaining oil until crisp-tender, 3-5 minutes.
  4. Add green onions; cook just until tender, 1-2 minutes.
  5. Stir cornstarch mixture and add to pan.
  6. Bring to a boil; cook and stir until sauce is thickened, 2-3 minutes.
  7. Add beef and heat through.
  8. Serve over rice.
Notes
  1. Frozen broccoli florets, thawed and drained works well.
  2. 1/8 - 1/4 teaspoon cayenne pepper is a good substitute if you don't have ginger root.
