Ingredients
- 2 Tablespoons sesame oil, divided
- 1 large egg
- 1 teaspoon water
- Kosher salt
- 1/2 large carrot, diced
- 1 green onion, thinly sliced, white and green parts divided
- 1 clove garlic, minced
- 1/2 teaspoon peeled and minced ginger (from a 1" piece)
- 1/2 cup cooked long grain rice (previously cooked and chilled - crispier when frying)
- 1/4 cup frozen peas
- 2 teaspoons low-sodium soy sauce

Instructions
- Heat a large skillet over high heat until very hot, about 2 minutes.
- Add 1 tablespoon oil.
- Beat egg with 1 teaspoon water and a pinch salt and add to skillet. Cook, stirring to form large soft curds, about 30 seconds. Transfer to a plate.
- Return skillet to high heat and add 1 tablespoon oil, the carrots, and whites of the green onions.
- Cook until lightly golden, about 2 minutes.
- Add garlic and ginger and cook, stirring, until fragrant (about 1 minute).
- Add rice, peas, and cooked eggs to skillet.
- Pour in soy sauce and cook, stirring until heated through (about 1 minute).
- Season with salt and pepper and stir in the remaining green onions.
Notes
- Finely chopped roasted peanuts or hazelnuts stirred into the rice, with the onion at the end add an additional nutty, roasted flavor.
