Tamale Pie
Serves 6
Big family favorite sure to satisfy even the largest appetite!
Ingredients
  1. 1 lb. ground beef, pork or turkey
  2. 1 cup chopped onion
  3. 1 cup chopped green pepper
  4. 2 8oz cans tomato sauce
  5. 1 1/2 cups whole kernel corn, drained
  6. 1/2 cup pitted black olives, chopped
  7. 1 clove garlic, minced
  8. 1 Tbsp. sugar
  9. 1 tsp salt
  10. 2-3 tsp chili powder
  11. dash of black pepper
  12. 1 1/2 cups Sharp American or Cheddar cheese, shredded
  13. 3/4 cup yellow cornmeal
  14. 1/2 tsp salt
  15. 2 cups cold water
  16. 1 Tbsp. butter or margarine

Instructions
  1. Cook meat, onion and green pepper in a large skillet until meat is lightly browned and vegetables are tender.
  2. Stir in tomato sauce, corn, olives, garlic, sugar, salt, chili powder and pepper.
  3. Simmer 20 to 25 minutes or until thick.
  4. Add cheese and stir until melted.
  5. Turn into a greased 9x9x2 inch baking pan.
  6. In a pot on medium heat, stir cornmeal and 1/2 tsp salt into 2 cups cold water.
  7. Cook, stirring constantly until thickened.
  8. Add butter and mix well then spoon over hot meat mixture.
  9. Bake in moderate oven (375 degrees) about 40 minutes.
