Pork Ribs - Spicy Pineapple

Pork and Pineapple marry well and I've been dying for some pork ribs marinated with pineapple juice. I thought I could spice it up a bit to counter the sweetness. WOW! One of my new favorite ways to cook ribs! The Cayenne pepper and Chili powder add just the right amount of kick!

Ingredients
- 1 Rack St. Louis Style Pork Ribs
- 1 20oz. can Pineapple Chunks with Juice
- 1 Cup Brown Sugar
- 1 Tablespoon Chili Powder
- 1 Tablespoon McCormick™ Roasted Garlic and Herb
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Cayenne Pepper

Instructions
- Place the ribs on a heavy-duty sheet pan.
- Blend all seasoning together and rub it into the ribs, front and back.
- Place the ribs, bony side down.
- Spread the pineapple over the top of the ribs.
- Pour the pineapple juice over the ribs (being careful not to wash off the spice rub).
- Tent the sheet pan with aluminum foil; sealing it tight.
- Marinate the ribs for 2-3 hours.
- Preheat oven to 250° F.
- Bake ribs in center of oven for 1 hour 15 minutes.
- Carefully remove the foil (avoiding the steam release).
- Bake, uncovered, an additional 25 minutes.
- Remove pineapple chunks and set aside.
- Set oven to BROIL and paint the ribs with your favorite BBQ Sauce; broil and brush until sticky (about 5 minutes).
- Remove from oven and carve the ribs.
- Serve with the baked pineapple chunks mixed with rice or riced cauliflower, covered with the juices!
