Strawberry Bread

Yes, it uses 2 cups of sugar, which causes it to taste more like a pound cake, but keep calling it bread and go ahead and have another slice. 😉 Coating the diced strawberries with flour keeps them from sinking to the bottom of the loaf.

Ingredients
- 2 cups fresh strawberries, diced, drained and tossed in flour
- 3 cups All-Purpose flour
- 2 cups sugar
- 1 ¼ cups vegetable oil
- 4 eggs
- 3 tsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 1 cup chopped pecans (optional)

Instructions
- Preheat oven to 350 degrees.
- Grease 6 small loaf pans (or 2 large loaf pans).
- In mixing bowl, blend the eggs, oil and sugar until well blended.
- Add flour, soda, salt and cinnamon and beat just until blended.
- Dice the strawberries, toss with 2 Tablespoons of reserved flour.
- Fold in Strawberries (and nuts, if adding).
- Divide batter into the 6 pans evenly (I use a 1 cup measuring cup).
- Bake about 40 – 45 minutes making sure a knife comes out clean when inserted.
- Bake for 1 hour if using two large loaf pans, make sure a knife comes out clean when inserted.
Notes
- butter or honey butter would be tasty on this warm bread!
