Yes, it uses 2 cups of sugar, which causes it to taste more like a pound cake, but keep calling it bread and go ahead and have another slice. 😉 Coating the diced strawberries with flour keeps them from sinking to the bottom of the loaf.

Ingredients
  1. 2 cups fresh strawberries, diced, drained and tossed in flour
  2. 3 cups All-Purpose flour
  3. 2 cups sugar
  4. 1 ¼ cups vegetable oil
  5. 4 eggs
  6. 3 tsp cinnamon
  7. 1 tsp baking soda
  8. 1 tsp salt
  9. 1 cup chopped pecans (optional)

Instructions
  1. Preheat oven to 350 degrees.
  2. Grease 6 small loaf pans (or 2 large loaf pans).
  3. In mixing bowl, blend the eggs, oil and sugar until well blended.
  4. Add flour, soda, salt and cinnamon and beat just until blended.
  5. Dice the strawberries, toss with 2 Tablespoons of reserved flour.
  6. Fold in Strawberries (and nuts, if adding).
  7. Divide batter into the 6 pans evenly (I use a 1 cup measuring cup).
  8. Bake about 40 – 45 minutes making sure a knife comes out clean when inserted.
  9. Bake for 1 hour if using two large loaf pans, make sure a knife comes out clean when inserted.
Notes
  1. butter or honey butter would be tasty on this warm bread!
