Ingredients
  1. 2 cups zucchini, grated
  2. 2 cups sugar
  3. 3 cups AP flour (un-sifted)
  4. 1 cup vegetable oil
  5. 3 eggs
  6. 3 teaspoons vanilla extract
  7. 3 teaspoons cinnamon
  8. 1 teaspoon salt
  9. 1 teaspoon baking soda
  10. ½ teaspoon baking powder
  11. 1 cup chopped nuts (optional)

Instructions
  1. Preheat oven to 325° F.
  2. In a large mixing bowl, blend sugar and oil.
  3. Blend in eggs and vanilla.
  4. Add zucchini, flour and remaining dry ingredients and blend well.
  5. Fold in chopped nuts last (if included).
  6. Grease and flour 2 large loaf pans.
  7. Evenly distribute batter in loaf pans.
  8. Bake for one hour (or until a toothpick, inserted into the bread, comes out clean).
