Tuna Salad Deviled Eggs
Serves 4
Ingredients
  1. 8 large hard boiled eggs, halved (recipe here)
  2. 2 (6 oz) cans albacore tuna, packed in water, drained
  3. 1 tbsp red onion, minced
  4. 1/3 cup mayo
  5. 1 teaspoon red wine vinegar
  6. chopped fresh chives
  7. salt and pepper, to taste

Instructions
  1. In a medium bowl combine the egg yolks with mayo and mash.
  2. Add tuna, red onion and red wine vinegar.
  3. Scoop heaping spoonfuls of the tuna salad into the 16 halved eggs. Garnish with chives.
Notes
  1. Serving size: 4 egg halves.
