Zuppa Toscana Soup (Homestyle)

Homestyle Zuppa Toscana Soup
Serves 8
This is a recipe similar to Olive Garden's that uses bacon instead of bacon bits and a spicy Italian sausage, pared down to serve 8. Equally yummy! Great served with a crunchy bread or breadsticks.
Ingredients
  1. 1 lb. spicy Italian sausage
  2. ½ lb. bacon, chopped
  3. 2 large Russet potatoes (or 5-6 smaller ones), scrubbed clean and chopped
  4. 1 medium onion, chopped
  5. 2 cups Kale, chopped
  6. 2 cloves garlic, chopped
  7. 7 cups water
  8. 3 Chicken bouillon cubes
  9. 1 cup heavy whipped cream
  10. Salt and Pepper, to taste

Instructions
  1. In a Dutch oven or large soup pot over medium-high heat, brown sausage, breaking into small pieces as you fry it. Drain and set aside.
  2. In the same Dutch oven or pot, over medium-high heat, brown bacon, remove and set aside, leaving two tablespoons of the rendering bacon fat in pot.
  3. Sauté the potatoes, onions and garlic in the bacon fat until the onions start turning translucent.
  4. Add sausage, bacon, water, bouillon cups to pot. Bring to a boil then add kale and simmer until potatoes and kale are tender.
  5. Stir in heavy cream and simmer for an additional 5 minutes.
