Tropical Fruit Salad
Serves 10
A versatile, refreshing side dish/desert, suitable for any meal. Sweetness of the filling can be adjusted by backing off the cherry juice and adding more water to make up the 3 cups of liquid, or even rum or whatever you think might float your boat.
Ingredients
  1. 1 large jar maraschino cherries
  2. 1 large can pineapple chunks
  3. 1 large can mandarin orange slices
  4. 2 bananas, sliced
  5. 2 Tbsp. frozen orange juice concentrate
  6. 3 Tbsp. Minute Tapioca
  7. 1 small package vanilla pudding (not instant)

Instructions
  1. Drain oranges, cherries and pineapple - retain juice.
  2. Add enough water to make 3 cups liquid.
  3. Pour liquid into a pot with puddings and bring to a boil.
  4. Stir and cook just until it thickens.
  5. Remove from heat and add orange juice concentrate.
  6. Cool in refrigerator before stirring in fruit.
  7. Chill until cold.
  8. Slice bananas and add to mixture just before serving.
