Brad's Smoked Turkey Noodling Soup

Homemade egg noodles or dumplings and smoked turkey; combine them and Wow! Here’s my recipe for Smoked Turkey Noodling Soup with homemade noodlings - a cross between an egg noodle and a dumpling! You can replace the turkey with roasted chicken but nothing beats the flavor of the smoked turkey!
Noodles
- 2 ½ cups all-purpose flour, sifted
- ½ teaspoon baking powder
- 1 pinch salt
- 2 eggs
- 1 Tablespoon butter
- ½ cup milk
Soup
- 2 cups chopped/shredded, smoked turkey
- 9 cups smoked turkey stock
- 3 cloves garlic
- 4 large carrots, coined
- 2 cups celery, chopped
- 1 medium onion, chopped
- 1 cup yellow pepper, chopped
- 1 cup frozen peas
- ½ teaspoon dried basil
- ½ teaspoon dried thyme
- ½ teaspoon black pepper

Noodles
- Place the flour, salt and baking powder in the sifter and sift into a large bowl then mix well (NOTE: if you don’t want the thick noodles, leave out the baking powder).
- In a separate bowl, blend and beat the egg, milk and butter.
- Pour the liquid mix into the flour mix and knead into dough until smooth (about 5 minutes).
- Let rest in a covered bowl for about 10 minutes.
- On a floured surface, roll out dough to ¼ inch thickness.
- Cut into desired width noodles with a pizza knife and cut to desired length (I do ¼” by 4”).
- Separate and toss noodles then allow to air dry before cooking (1 to 2 hours – depends on the thickness of the noodles).
Soup
- Sweat onions, carrots, celery and garlic in a large covered stock pot until onions are translucent and carrots begin to soften. Season with the pepper, basil and thyme while sweating.
- Add turkey stock, frozen peas and turkey meat then bring to a boil (salt and pepper to taste).
- Add dried noodles and boil until desired consistency (depends on the thickness of noodles – probably 10 to 15 minutes).
