Rum Pineapple Boats

Tom's Rum Pineapple Boats
Serves 4
Wow! Serve this as a BBQ side dish or a mouth-watering dessert! I really think one pineapple won't be enough!
Ingredients
  1. 1 pineapple
  2. 1/3 cup melted butter
  3. ¼ cup packed light brown sugar
  4. 3 Tablespoons dark rum
  5. ½ tsp. ground cinnamon
  6. 1/8 tsp. ground cloves
  7. Freshly grated nutmeg

Instructions
  1. Cut pineapple through (top-down) and core into quarters.
  2. Cut pineapple quarters into ½ inch slices, cutting to but not through the shell.
  3. Cut along the shell to loosen the slices, leaving them in place.
  4. Mix butter, brown sugar, rum, cinnamon and cloves.
  5. Wrap pineapple tops in aluminum foil (to prevent burning).
  6. Place pineapple quarters on medium grill and cook until pineapple is hot throughout (about 15 minutes), basting several times with the butter-rum mixture.
  7. Remove from grill and sprinkle generously with nutmeg.
