Pork Chops with Apples and Onions

I love a good pork chop and pork pairs well with fruit. I've never tried it with apples before and now I regret waiting! The apple combined with the onion creates a savory dish.
Ingredients
  1. 4 bone-in pork chops
  2. 1 large sweet yellow onion, sliced & quartered
  3. 2 Granny Smith apples, cored and sliced
  4. 1 tablespoon olive oil
  5. 2 tablespoons unsalted butter
  6. Coarse salt and freshly ground black pepper
  7. 1 cup beer, white wine or chicken broth

Instructions
  1. Sprinkle chops generously with salt and pepper on both sides.
  2. Heat a large skillet over medium-high heat and swirl in the olive oil.
  3. Brown the pork chops for about 5 minutes per side (ensure a golden sear forms). Transfer the chops to a warm plate.
  4. Swirl the butter into the pan. Add the onion and apples. Sauté until the onion slices are lightly caramelized and the apples have begun to soften, about 8 to 10 minutes.
  5. Stir in the beer or wine or broth and return the chops to the pan, covering each with apples and onions.
  6. Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture.
  7. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce.
Notes
  1. Optional: Serve over a bed of rice pilaf.
