Pork Chops with Apples and Onions

I love a good pork chop and pork pairs well with fruit. I've never tried it with apples before and now I regret waiting! The apple combined with the onion creates a savory dish.
Ingredients
- 4 bone-in pork chops
- 1 large sweet yellow onion, sliced & quartered
- 2 Granny Smith apples, cored and sliced
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- Coarse salt and freshly ground black pepper
- 1 cup beer, white wine or chicken broth

Instructions
- Sprinkle chops generously with salt and pepper on both sides.
- Heat a large skillet over medium-high heat and swirl in the olive oil.
- Brown the pork chops for about 5 minutes per side (ensure a golden sear forms). Transfer the chops to a warm plate.
- Swirl the butter into the pan. Add the onion and apples. Sauté until the onion slices are lightly caramelized and the apples have begun to soften, about 8 to 10 minutes.
- Stir in the beer or wine or broth and return the chops to the pan, covering each with apples and onions.
- Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture.
- If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce.
Notes
- Optional: Serve over a bed of rice pilaf.
