Corrinne's Peanut Brittle
Great Grandma Corrinne's famous Christmas peanut brittle! Showed up every year in a holiday tin. Guaranteed to bring back memories of your childhood!
Ingredients
  1. 2 cups white sugar
  2. 1 cup white corn syrup
  3. 1/2 cup water
  4. 2 tablespoons butter
  5. 2 1/2 cups raw peanuts, chopped or halved
  6. 1 teaspoon vanilla
  7. 1 1/2 tsp. soda

Instructions
  1. Butter two large baking sheets, set aside.
  2. Butter sides of heavy 3 quart saucepan.
  3. In saucepan combine sugar, corn syrup, butter and 1/2 cup water.
  4. Clip candy thermometer to side of pan.
  5. Cook and stir over medium heat until boiling.
  6. Cook and stir until 275 degrees (soft crack stage).
  7. Add vanilla and nuts and cook until 295 degrees (hard crack stage).
  8. Remove from heat & remove thermometer.
  9. Add soda while stirring constantly.
  10. Quickly pour onto buttered baking sheets, spreading as thin as desired.
  11. Cool and break into pieces.
