Corrinne's Peanut Brittle

Great Grandma Corrinne's famous Christmas peanut brittle! Showed up every year in a holiday tin. Guaranteed to bring back memories of your childhood!
Ingredients
- 2 cups white sugar
- 1 cup white corn syrup
- 1/2 cup water
- 2 tablespoons butter
- 2 1/2 cups raw peanuts, chopped or halved
- 1 teaspoon vanilla
- 1 1/2 tsp. soda

Instructions
- Butter two large baking sheets, set aside.
- Butter sides of heavy 3 quart saucepan.
- In saucepan combine sugar, corn syrup, butter and 1/2 cup water.
- Clip candy thermometer to side of pan.
- Cook and stir over medium heat until boiling.
- Cook and stir until 275 degrees (soft crack stage).
- Add vanilla and nuts and cook until 295 degrees (hard crack stage).
- Remove from heat & remove thermometer.
- Add soda while stirring constantly.
- Quickly pour onto buttered baking sheets, spreading as thin as desired.
- Cool and break into pieces.
