Pacific Pollock Fillets With Spicy Ramen Crust
This is a spicy (but not too spicy) way to serve white fish and the ramen noodles make for a great coating. Serve with roasted potatoes or rice pilaf and your favorite vegetable for a quick healthy meal!
Ingredients
  1. 1 lb. Pacific Pollock fillets
  2. ½ cup dry white wine
  3. 1 large egg, well beaten
  4. 1 cup Corn Starch
  5. 2 Tablespoons Cajun seasoning
  6. 2 - 3 oz. packages Ramen style noodles, dry and coarsely ground
  7. 1/3 cup canola oil
  8. 1 Tablespoon butter
  9. 1 Fresh lemon (sliced)

Instructions
  1. Combine wine and egg, mixing well. Set aside.
  2. Mix corn starch with Cajun seasoning.
  3. Evenly coat Pollock fillets with seasoned corn starch, shaking off any excess.
  4. Dip coated seasoned fillet in egg mixture and gently press fillet into ground Ramen style noodles.
  5. Allow noodle coated fillets to rest for 3 to 5 minutes before frying.
  6. In a large sauté pan over medium high heat, combine oil and butter.
  7. When oil is hot, sauté fillets for approximately 3 minutes on each side, or until lightly golden. Caution - do not overcook.
  8. Squeeze fresh lemon over the fillets and serve.
