Pacific Pollock Fillets With Spicy Ramen Crust

This is a spicy (but not too spicy) way to serve white fish and the ramen noodles make for a great coating. Serve with roasted potatoes or rice pilaf and your favorite vegetable for a quick healthy meal!
Ingredients
- 1 lb. Pacific Pollock fillets
- ½ cup dry white wine
- 1 large egg, well beaten
- 1 cup Corn Starch
- 2 Tablespoons Cajun seasoning
- 2 - 3 oz. packages Ramen style noodles, dry and coarsely ground
- 1/3 cup canola oil
- 1 Tablespoon butter
- 1 Fresh lemon (sliced)

Instructions
- Combine wine and egg, mixing well. Set aside.
- Mix corn starch with Cajun seasoning.
- Evenly coat Pollock fillets with seasoned corn starch, shaking off any excess.
- Dip coated seasoned fillet in egg mixture and gently press fillet into ground Ramen style noodles.
- Allow noodle coated fillets to rest for 3 to 5 minutes before frying.
- In a large sauté pan over medium high heat, combine oil and butter.
- When oil is hot, sauté fillets for approximately 3 minutes on each side, or until lightly golden. Caution - do not overcook.
- Squeeze fresh lemon over the fillets and serve.
