Carmen's Mango Salsa

    Serves 8
    This light and summery salsa can be eaten as an appetizer with tortillas or as a garnish! Pairs well with white fish, shrimp and scallops.
	Ingredients
			- 4 ripe mangos
 - 3 jalapeño peppers (seeded)
 - 1 red onion
 - 1 small bunch of cilantro
 - 1 lime
 - Olive oil
 - Salt &Pepper

Instructions
			- Chop mango, jalapeño & onion into small pieces.
 - Remove cilantro stems & chop leaves well.
 - Blend in bowl and lightly coat with Olive oil.
 - Squeeze juice from lime into salsa mixture, salt and pepper to taste, mix well.
 - Refrigerate 1 hour to let flavors blend.
 
Notes
			- Adding chopped tomatoes create a more “Mexican flavor profile.
 - Adding chopped pineapple makes it more “Tropical.”
