Ingredients
  1. 1 1/2 cups all-purpose flour
  2. 1/2 teaspoon baking powder
  3. 1/8 teaspoon salt
  4. 1/2 cup (1 stick) unsalted butter, softened
  5. 3/4 cup white sugar
  6. 1 large egg
  7. 3/4 teaspoon vanilla extract

Instructions
  1. In a medium bowl, whisk flour, baking powder, and salt - set aside.
  2. In a large bowl, beat butter and sugar until smooth (about 2 minutes).
  3. Beat in the egg and vanilla.
  4. On low speed, beat in the flour mixture until just combined.
  5. Divide dough in half and form each half into a disk.
  6. Wrap each disk in plastic wrap and refrigerate for at least four hours (or overnight).
  7. Preheat oven to 350° F.
  8. On a lightly floured surface roll out one disk to 1/4 inch thickness.
  9. Cut into desired shapes with cookie cutters.
  10. Place cut cookies 1 inch apart on ungreased cookie sheets.
  11. Bake 10 to 12 minutes or until lightly golden around edges.
  12. Place on racks to cool completely before frosting.
  13. Repeat with other half of dough and remaining dough scraps.
Notes
