Nick's Cabbage and Potato Soup

    Serves 6
    Heart warming bowl of flavors!  Great on a cold day.  The Poblano pepper adds just enough (mild) kick!
	Ingredients
			- 1 Medium Poblano pepper - medium dice
 - 1 Medium white onion - medium dice
 - 1 Large carrot - medium dice
 - 1 Cup Peas
 - 1 Large red potato - medium - large dice
 - 1 quarter to half head of cabbage - large chop
 - 3 Cloves garlic
 - 2-3 qt. Chicken stock or 1-2 bouillon cubes
 - 1/2 Tbsp. dry thyme
 - 1 Bay leaf
 - Salt & pepper

Instructions
			- Prepare vegetables. Add some olive oil to soup pot on low heat.
 - Sweat onions, carrots and Poblano pepper. Add garlic, thyme and bay leaf. Sweat some more.
 - Season with salt & pepper to taste.
 - Add stock and bring to simmer.
 - Add potatoes and simmer until almost done.
 - Add peas and cabbage.
 - Cook until both are tender. Season to taste.
