Instructions
- Mix yeast with 1 Tbsp. water to activate (until it foams, 5-10 minutes)
- Mix flour and salt. Add yeast mixture when ready and olive oil and warm water.
- Knead into a ball, put in an oiled bowl (2 Tbsp. olive oil). Cover with a towel or plastic wrap.
- Proof 45 min – 1 ½ hours, until it's doubled in size.
- Heat oven to 400 degrees F. and put a non-stick pan in oven to heat up. (With a regular sheet pan, just heat it and oil it later). The pan must be heated or the bread will not bubble when placed on the pan.
- Roll dough out into a snake. Cut into 6 pieces and shape them into balls.
- Roll pieces out into circles, around 1/8 inch thick, about 6 inches in diameter.
- Bake circles on hot pan (oil it if not non-stick pan) until they bubble up, then remove (about 5-6 minutes for soft Pita bread, 8 minutes for crispy chips).
- Cut in half and slice the remaining openings if need be with a paring knife or slice into triangles for crispy chips (cut like a pizza).
Notes
- • It's done when just a few light brown spots appear
- • Number Of Servings: Six – 6 inch pita breads
- • Preparation Time: 1 ½ - 2 hours
